The amaretti cookie is made of three ingredients: almonds, egg whites and sugar. This simple recipe makes a delicious, chewy and sweet cookie. I was excited to see that Il Convento, owned by Luisa Di Marcantonio, had amaretti cookies at the Locke Street Farmers’ Market. I had the pleasure of a fresh sample and I just want to thank Luisa for sharing her family’s recipe!
Luisa’s family comes from the region of Abruzzo in Italy which is know for its cuisine. Her passion for traditional Italian food sparked her interest in starting her own bakery. Il Convento is named because of the convent she used to visit in Italy where the food was spectacular and inspiring. Luisa wanted to bring amaretti to Canada but found that none of the imported brands come close to her mother’s recipe.
I really enjoyed the amaretti and I’m excited to try the new creations from Il Convento. Luisa is looking to launch a chocolate version of the amaretti in the near future! You can find Il Convento at the Locke Street Farmers’s Market every Saturday.
