Local Bounty Box: Apple, Radish, Carrot, Beet Slaw

I recently signed up for the Mustard Seed Coop’s Local Bounty Box and I am thrilled to receive a large box filled with amazing, fresh and diverse local produce every other week! It is always a mix of vegetables that helps you get creative in the kitchen.

This week’s large box included: From Koike Farms (Ontario): Kale, Black Spanish Radish, Magenta Summer Crisp Lettuce, Bulb Onions (Ontario); Local Broccoli (Ontario); Beet Bunch with Greens (Ontario); 1 Pint Grape Tomatoes (Ontario); 1.5 LB New Potatoes (Ontario); 8oz Mushrooms (Cremini or Button; Ontario); Sprouts (Ontario); Local Zucchini (Ontario); 1.5 LB Nantes Carrots (Ontario); Shared Harvest Organic Parsley (Ontario); 10 Lincoln Line Apples (Ontario); 1 LB Cherries (Ontario)

Now, I don’t know if you saw that black Spanish radish, but it was certainly intimidating! Apparently a single radish’s stem can grow several feet high. You can eat the stem leaves, but they are tart. I was at a bit of a loss of what to do with the radish and then I came up with the idea to do a slaw. After some internet research I decided to combine a few recipes and came up with this light and fresh slaw mix inspired by my local bounty box.

Apple, Radish, Carrot, Beet Slaw

Slaw
1 black Spanish radish
2 carrots
2 apples
1 beet
1 green/spring onion
Cilantro (optional)

Dressing
2 limes
1 tbsp light olive oil
1 tbsp honey

1. Peel the radish, carrots, apples and beet and slice using a mandolin to create julienned/match sticks. You can also grate the vegetables if you don’t have a mandolin. Place all slices in a large bowl.

2. Chop the green onion and add to the bowl. You can also add cilantro if you like.

3. Dressing: Juice two limes and combine the juice with olive oil and honey (you may need to slightly heat your honey before to soften it to ensure it mixes well), whisk together.

4. Pour the dressing over the veggies and toss well to combine. Serve!

I paired mine with honey-mustard roasted chicken (simply mix about 1 tbsp honey with 1.5 tbsp whole grain dijon mustard and apply to the chicken before baking in the oven).

  1. For the first time, I enrolled for fresh, local(ish) and organic foods from Organic Live. I really enjoy every other Thursday; when the large box of goodies are delivered I feel like it’s my birthday or Christmas! And thank you for that recipe, sounds and looks delicious!
